Try this for market apps you cant see:
1. nandroid backup your new 2.1 rom
2. switch to supported rom
3. download whatever app you want
4. make a titanium backup.
5. open any favorite file manager app (astro+androzip for me)
6. find the file in /sdcard/titanium and select the .tar file and select "extract here" and you will have the .apk for this app on your sdcard
7. nandroid restore to your new 2.1 and install the .apk

the eris reset my market just fine however I still can't find the revamped nexus one live wallpaper on the market, so here is what I am going to try:
ro.build.fingerprint=google/passion/passion/mahimahi:2.1-update1/ERE27/24178:user/release-keys
Its the fingerprint command for the nexus one. Considering it's Googles bread and butter, I figured it'd be best to go for... I'll let you know the results.

I'm using purehandler 1.0 and evernote also don't appear, many roms are having market issues

tried both the N1 and the Scholes build.prop to no luck. Market must not determin LWP via the fingerprint, I'll see what I can find.

The firgerprint of the firmware is not in the whitelist (use the one from 1.5 firmware).
