Olaf Encke has designed several skins like Touch HD, Nokia N810 for the emulator. You can grab them here.

Unzip the folder to <sdk>/tools/lib/images/skins/ . The skin can be used through the command emulator -skin <NewSkin> or in Eclipse, goto Run > Run Configurations, select Target tab, choose the new skin from Screen Size.
